The university opened the building earlier this month. Chef and Proprietor José Andrés, stated that the cuisine is vegetable focused and will serve a limited menu this week while in its initial opening period. Beefsteak will offer a Chipotle-style assembly line for customers to build their own bowl, as well as four signature grain and vegetable bowls, including the Eden Bowl with quinoa, sweet peas, edamame and a vast selection of other fresh vegetables, or the Frida Kale, with rice, kale, corn, black beans and spicy tomatoes. The restaurant is being described as fun and whimsical, with the menu sporting entertaining drawings of offered vegetables. For die-hard carnivores, one of the signature bowls has a salmon add-on option, the build-your-own bowls have a chicken option as well.
